Recipe for Beef Bone Broth

Preparation time: 8–10 hours

Ingredients:

  • 2.5 kg pasture-raised beef bones
  • 5.5 liters tap water
  • 1/4 celery root
  • 4 medium carrots
  • 2 large tomatoes
  • 100 g leek
  • 2 large onions
  • 30 ml organic apple cider vinegar
  • ½ bunch fresh parsley
  • 40 g rock salt, or sea salt as an alternative
  • 2 tsp whole black peppercorns
  • 3 bay leaves
  • 3 g thyme
  • Optional: 2 garlic cloves
  • Butter or ghee

Simmer the Bones – Step by Step:

  1. Quickly blanch the beef bones in boiling water for 5 minutes. Rinse the bones briefly with cold water, then roast them on a baking sheet in the oven at around 180°C until they turn lightly brown and develop rich roasting aromas.
  2. Dice the celery, leek, carrots, and tomatoes, then add them to a pot along with the roasted beef bones, parsley, spices, and apple cider vinegar. Cover everything with cold water.
  3. Sauté the onions (and garlic if you like) in a little ghee until fragrant, then add them to the pot.
  4. Bring the broth to a boil, then reduce the heat and let it simmer gently for 8 to 10 hours. Skim off fat and foam regularly throughout cooking.
  5. Strain the broth through a cheesecloth or fine sieve, then refrigerate it overnight.
  6. The next day, simply remove the solidified fat layer from the chilled broth, leaving you with a clear, flavorful base perfect for enriching your dishes. Next, pour the broth into a pot, discarding the cloudy sediment at the bottom. If you prefer a richer beef broth, you can leave some or all of the fat in the broth.
  7. Bring the broth back to a boil, then season with salt, herbs, and spices. Let it steep for 30 minutes before straining it through a cloth once more. All done!
