This spicy collagen shakshuka makes a hearty breakfast or a quick, satisfying dinner with a rich tomato sauce, eggs, and a boost of extra protein.
Ingredients for 2 servings
* 1 tbsp Organic collagen from real bone broth
* 1 can chopped tomatoes, 400 g
* 3–4 eggs
* 1 red bell pepper
* 1 small onion
* 1 garlic clove
* 1 tbsp olive oil
* 1 tsp paprika powder
* ½ tsp cumin
* Salt & Pepper
* Optional: chili, feta, parsley, or coriander
Preparation
1. Finely chop the onion, garlic, and bell pepper.
2. Heat olive oil in a pan and sauté everything for 4–5 minutes.
3. Lightly toast the paprika powder and cumin.
4. Add the chopped tomatoes and let the sauce simmer for 10 minutes.
5. Mix the organic collagen with 2–3 tablespoons of warm water until smooth, then stir it into the sauce to enrich its flavor and texture.
6. Create small wells in the sauce, crack the eggs into them, and cook with the lid closed until the eggs are set.
7. Serve garnished with fresh herbs and, if you like, some crumbled feta.
Tip:
This dish is especially delicious when served with toasted sourdough bread or, for a low-carb option, with avocado.
