Ingredients
- 180 g risoni, kritharaki, or small pasta
- 1 tbsp olive oil
- 1 small onion, finely diced
- 1 garlic clove, finely chopped
- 1 tbsp tomato paste
- 1 can chopped tomatoes, about 400 g
- 300–400 ml water
- 20 g JARMINO bone broth concentrate
- 1 tsp Italian herbs
- 1 handful baby spinach
- 2 tbsp cream cheese, crème fraîche, or coconut yogurt
- Salt, Pepper
- Optional: Parmesan, basil, chili
Preparation
- Sauté the onion and garlic in olive oil until they turn translucent. Lightly toast the tomato paste.
- Stir in the chopped tomatoes, water, JARMINO concentrate, and herbs.
- Add the risoni and let it simmer over medium heat for 10–12 minutes, stirring regularly. Add a bit more water if needed.
- Gently fold in the spinach, stir in the cream cheese, and season with salt and pepper to taste.
- Serve topped with Parmesan, fresh basil, or a touch of chili for extra flavor.
